Carole enjoys experimenting with different ingredients and especially relishes the challenge of adapting old favourites to make them gluten-free. She has successfully adapted many traditional European recipes; her husband Albert is a constant source of inspiration. Carole strongly believes you should never have to ‘apologise’ for a meal or cake being gluten-free. She will not accept second-best in her food. A ‘special’ diet can be restrictive enough without the added burden of it being bland.
She believes gluten-free food should be of a sufficiently high standard that all people, not just the gluten intolerant, can enjoy it.
With her third book, Is it gluten-free? An A-Z of things gluten-free, she has exposed the gluten-free world to the broader community by recognising that a gluten-free diet affects many more than just the individual and their immediate family. Carole’s dream is to one day see gluten-free food available everywhere, just like say vegetarian food is now. With the increased incidence of Coeliac Disease and other food intolerances in our society she believes this is not unreasonable, it’s absolutely necessary!
Carole lives with her husband Albert in the tiny town of Anakie, north of Geelong in Victoria, Australia. |
